You can tell cooler weather is coming when this happens...

First chicken of the season getting cooked down.  I could just drink the broth for days but...

There's NOTHING like fresh, homemade chicken broth!  When the cooler temperatures hit, it seems everyone gets stuffy with the weather change and the fall pollen in the air so out comes the big stock pot, chicken and fresh vegetables.

 



...the kids always want to have chicken and dumplings!!

 

So I cooked a second chicken down four days later to freeze some broth and to make some chicken noodle soup.  We had it for dinner last night and it was really good!  I'll have it the rest of the week for dinner.  I'm about to cook the third chicken down because Katie is coming in town and wants some soup because she still isn't over her cold...even the nurse needs chicken noodle soup!
